Holidays are over and while we enjoy them they also leave us feeling exhausted. Here is a great recipe from Danielle Walker's eat what you love cookbook for energy balls. These pack a protein punch when we all need a little pick me up.
1/2 cup golden flaxseeds
1 cup unsweetened sunflower seed butter
1/2 cup light-colored raw honey
15 small pitted dates
3 tablespoons raw cacao powder
2 tablespoons coconut flour
2 tablespoons unflavored collagen peptides powder or protein powder of your choice
1 teaspoon pure vanilla extract
1/2 cup chopped dark chocolate (80 percent cacao)
Fine sea salt
Cocoa powder or finely shredded unsweetened coconut, for rolling
Place the flaxseeds in a food processor and process until finely ground. Add the sunflower seed butter, honey, dates, cacao powder, coconut flour, collagen peptides, and vanilla and process until smooth. Stir in the chocolate and a pinch of salt. Remove the blade and chill the mixture in the fridge for 30 minutes.
Place cocoa powder or shredded coconut on a plate. Roll the chilled mixture into 1-inch balls, and roll each ball in the topping until coated.
Store in an airtight container in the fridge for 1 week or in the freezer for 6 months. Eat straightaway; or, if you prefer, defrost at room temperature for 30 minutes before serving.
