RECIPE OF THE MONTH


CRAB AND LIME QUICHE

These make great appetizers!!

Ingredients:

4 Eggs

2 scallions, thinly sliced

1 -  6 oz can of crab meat, well rinsed and drained

1 Tablespoon fresh chives, chopped

1 Roma tomato, finely diced

Zest of 1 lime

Juice of 1/2 lime

 

Directions:

Preheat oven to 425 degrees.  Whisk all ingredients together.  Fill mini-muffin tins 3/4 full with mixture.  Makes 24 mini-muffins.  Bake for 15 minutes or until lightly golden brown.
